久々になだ万で食事した。
「美味かった」が正直な感想。
写真を撮り忘れたけど、最も美味かったのは「はもちり」と「鱧の葛叩き」。
どちらも修業時代から数えたら何百回も食べた料理。
でもでもでも、
二つとも今まで食べた事のなかった味だった。
その理由は、
済州島産の養殖の鱧を使っている点。
スープに鱧出汁を使わず、スッポンとアサリと鰹昆布出汁を使っている点。
済州島の養殖鱧は愛媛の養殖穴子「活媛」と同じく、安価に提供する為の養殖ではなく、
人工的に作った「最適な自然環境」の中で自然に育てた高級魚です。
ちなみに卸価格は国内最高値の淡路産の４倍します。
