These Onagadai (Long-Tailed Red Snapper) came from Hachijojima Island.
Technically, Hachijojima is part of Tokyo, so their origin is “Tokyo.”
But since “Tokyo fish” doesn’t quite make sense to most people, we say “from Hachijojima.”
By the way, Hachijojima is one of the Izu Islands—but just to make it more confusing, the Izu Peninsula itself belongs to Shizuoka Prefecture!
Sorry for the geography lesson… it’s a bit complicated!

TOCHIGI LOVE
Amaou, Amarin, Beni Hoppe… There are countless strawberry varieties, but lately, my favorites are Tochigi-grown ones like Tochiotome, Tochiaika, and Skyberry. Their firm flesh, perfectly balanced sweetness and tartness, and satisfying bite make them—personally—good, better, and best!
I serve them as a garnish for desserts in some of my courses.
Strawberries bring love to humanity.

This fish is a KINME-DAI from Misaki, Kanagawa, freshly sourced today. Its English name is “Alfonsino,” but almost no one knows that. If you look closely at the photo, you’ll notice that all three fish have faint scratches on their sides—just one or two small marks. In the Japanese fish market, even minor blemishes like these cause the price to drop compared to unblemished fish. A few missing scales or a slight tear on the tail fin can also lower the value. But of course, the taste remains just as delicious, whether flawless or slightly marked.
Tonight, we’re serving this KINME-DAI as sashimi. Enjoy!

They are now alive.
Abalone is cooked in low-temperature steam, then stuffed with Gorgonzola risotto and baked in the oven. Tiger prawns are boiled in salt after the order is placed and served with a sauce flavored with soy-sauce-soaked garlic juice and black vinegar.
